Scrambled Eggs Over Whole Wheat Toast, Topped with Organic Ketchup

I need breakfast. How about you? It's one meal I never skip, and I love a breakfast with good carbs and protein, like today's scrambled eggs over whole wheat toast. Drizzle a bit of organic ketchup over it, and breakfast is served!





Mid Morning Snack

Dates, Banana and Almonds

Feeling sluggish already? Grab a quick energy booster, like fruits and nuts, and quickly get yourself out of the slump.




Lunch

Buttery Shrimp Salad Over Avocado and Whole Wheat Rolls (recipe here)
This sandwich was DE-LI-CIOUS! 
I loved how the shrimp was sauteed in butter, just a little, to add a charred and rich flavor. I also loved how the sauce was light and fresh. Add shrimp to creamy, wholesome avocado, and a fantastic and lunch was made.

Afternoon Snack

Toasted Tofu in Homemade Teriyaki Sauce (recipe at this link)

I used organic tofu by Wildwood. It was delicious!

The teriyaki sauce was equally delicious, and was made from scratch. You can get the recipe here

Dinner

Sweet Ginger Glazed Salmon (recipe at this link)

I like salmon in any flavor, but this sweet ginger glaze is probably one of the favorites. It's tangy and tasty, and surprisingly easy to create.
